The colour is medium gold, with very fine, short-lasting bubbles. On the nose cream, apricot, lime and almonds. In the mouth tasty and filling, with sensations consistent with the nose. The aftertaste is fresh and medium long.
This wine is made with equal parts of Chardonnay and Pinot Noir by a cooperative in Ambonnay, with grapes grown by Cyril Beaufort in Trépail. Cyril is a winegrower, who sells part of its grapes to a négociant manipulant and confers the rest to a Coopérative de manipulation. From the cooperative Saint-Réol he receives a certain amount of bottles, which he then market under his own name.
I visited Cyril while staying in Trépail, the last stop on my walk from Pontarlier to Reims. I spend with him more than three hours talking about Champagne. He greatly increased my knowledge of how Champagne his made, its history, its market and its geopolitics.
