The colour is pale ruby. On the nose wild berries, earth, spices. In the mouth light but tasty and pleasant. The aftertaste is long.
The Dôle is a Valais AOC made with 100% Pinot Noir or a mixture of red grape varieties also allowed and cultivated in Valais. In this case the blend must consist of at least 51% Pinot Noir and Gamay grape varieties, and Pinot Noir must prevail.
Other red grapes varieties that may be included in the blend are Gamaret, Garanoir, Carminoir, Ancellotta, Diolinoir, Merlot and Syrah. Some add colour to the wine, others give structure and tannins, while yet others add a touch of aromatic. The Valais Dôle is therefore a wine capable of a multitude of expressions, reflecting the terroirs and producers.
