The colour is medium straw. On the nose bay, rosemary, thyme, green apple. In the mouth sweet and sour. The aftertaste is medium long with a nice acid note.
Zelèn is a semi-aromatic white grape variety indigenous to the Vipava valley of Slovenian. In English, the name means “green” or “greener” and derives from the emerald green colour of the must.
This exemplar is made by Guerila, a biodynamic wine-growing farm founded by Zmagoslav Petrič in 2005 in the village of Planina, near Ajdovščina in the Vipava valley.
