The colour is medium ruby. On the nose red fruits, such as red cherries, raspberries and strawberries. In the mouth simple but balanced and enjoyable. The aftertaste is short but pleasant.
Mustiaio Governo is made with a blend of Merlot, Sangiovese and Syrah by Mustiaio winery, located in the Maremma region of Tuscany. A company that started making its own wines in 2006, after decades of grape growing experience.
Governo is a winemaking technique reportedly invented in Tuscany in the 14th century to help complete fermentation and stabilize the wine. The technique involves saving a batch of harvested grapes and allowing them to partially dry. If fermentation of the main batch starts to slow or appears to be nearing stuck fermentation, the half dried grapes are added to the must to give the yeast cells a new source of sugar to continue the fermentation. The must can then be fermented dry or stopped and leave the wine with a higher level of residual sugar. The process was widely used in the Chianti zones until the advent of temperature controlled fermentation tanks.
This wine is a special selection made for Coop. It sells for 7.50 CHF, but I bought it on sale for 3.75 CHF. I was expecting to use it for cooking. Instead, I ended up drinking it.
