The colour is medium copper, with fine, persistent bubbles. On the nose bread crust, marzipan and blood oranges. In the mouth this Champagne strongly recall the blood oranges first detected on the nose. The aftertaste is delicious and last for a pleasant while.
Overall, this Champagne delivers a very peculiar experience. It is made by Frank Pascal with 56% Pinot Meunier, 33% Pinot Noir and 11% Chardonnay grapes from the 2011 and 2012 vintages.
This Champagne Rosé is a blend of white and red wines. It has rested for 7 years on the lees and has been dégorgé in Mai 2019. The dosage is 3 g/L.
Frank Pascal is famous for his natural approach to winemaking. He began transitioning his estate in 1998 and by 2007 he was officially certified as an organic producer. In making his champagnes, he follows not just natural, organic and biodynamic principles but also naturopathic ideas more commonly associated with acupuncture. He only uses indigenous yeasts and does not filter or fine the wine.
In his vineyards Franck grows 60% Pinot Meunier, 20% Pinot Noir and 20% Chardonnay.
